Green Spinach Enchiladas

  • 1 (7 ounce) can green salsa
  • 1 bunch fresh spinach, rinsed and thinly sliced
  • 2 cups shredded Monterey Jack cheese
  • 1 (10 ounce) package corn tortillas

Preheat your oven to a medium-high temperature, equivalent to 350 degrees F (175 degrees C).

In a compact container, blend together half of the sour cream and the green salsa. Cover the surface of a 9x13 inch baking dish with an adequate amount of this mixture, ensuring it reaches the entire base.

On each tortilla, apply a small dollop of the salsa and sour cream in the center. Place a modest amount of spinach on top, followed by a sprinkle of Monterey Jack cheese. Roll the tortilla into a compact shape and secure it with a toothpick before placing it in the baking dish.

Once all tortillas have been added to the pan, pour the remaining salsa over the top and sprinkle with the remaining cheese.

Place the baking dish in a preheated oven and bake for 20 to 25 minutes, or until the enchiladas are nicely browned and heated through.
