Spinach Green Chile Quiche
Ingredients
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 12 eggs
  • 1 (8 ounce) package shredded Colby-Monterey Jack cheese
  • 2 cups small curd cottage cheese
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 2 (4 ounce) cans chopped green chilies
  • 1/2 cup melted butter
  • 2 (9 inch) unbaked pie crusts
Instructions
1
Begin by preheating your oven to a high temperature of 400 degrees Fahrenheit or 200 degrees Celsius.
2
In a small bowl, combine the flour, baking powder, and salt, whisking them together until well incorporated. Set this mixture aside for now.
3
In a separate mixing bowl, beat the eggs until they are smooth and free of lumps. Gradually whisk in the flour mixture that you set aside earlier, ensuring a uniform blend.
4
Meanwhile, combine the Colby-Monterey Jack cheese, cottage cheese, spinach, green chiles, and melted butter in the mixing bowl. Stir until all these ingredients are evenly blended together.
5
Divide this mixture into two or more pie crusts, depending on the size you prefer for your quiches.
6
Place these quiches in the preheated oven and bake for 15 minutes.
7
Then, reduce the temperature of your oven to a moderate heat of 350 degrees Fahrenheit or 175 degrees Celsius.
8
Continue baking the quiches for an additional 35 to 40 minutes, or until they are lightly browned and a knife inserted into the center comes out clean.
