- 1 teaspoon salt
- 12 eggs
- 1 (8 ounce) package shredded Colby-Monterey Jack cheese
- 2 cups small curd cottage cheese
- 1 (10 ounce) package frozen chopped spinach, thawed and drained
- 2 (4 ounce) cans chopped green chilies
- 1/2 cup melted butter
- 2 (9 inch) unbaked pie crusts

Begin by preheating your oven to a high temperature of 400 degrees Fahrenheit or 200 degrees Celsius.

In a small bowl, combine the flour, baking powder, and salt, whisking them together until well incorporated. Set this mixture aside for now.

In a separate mixing bowl, beat the eggs until they are smooth and free of lumps. Gradually whisk in the flour mixture that you set aside earlier, ensuring a uniform blend.

Meanwhile, combine the Colby-Monterey Jack cheese, cottage cheese, spinach, green chiles, and melted butter in the mixing bowl. Stir until all these ingredients are evenly blended together.
