  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 4 medium potatoes, chopped
  • 3 (14.5 ounce) cans chicken broth
  • 12 large Hatch green chile peppers, diced
  • 2 large zucchini, sliced
  • 2 carrots, cut into pieces
  • 1 teaspoon salt
  • 1 teaspoon garlic salt
  • 1 (15.25 ounce) can whole kernel corn, drained

Preheat the saucepan over medium heat, and pour in the oil. Allow the chicken to cook and stir constantly until it reaches a golden brown color, approximately 3 minutes.

Next, add the diced potatoes and onion to the saucepan, stirring frequently until they too are browned, taking an additional 3 to 5 minutes.

Introduce the remaining ingredients - chicken broth, green chiles, zucchini, carrots, salt, and garlic salt - into the saucepan. Bring the mixture to a rolling boil before reducing the heat and letting it simmer until all the vegetables are tender, around 1 hour.

Once the vegetables have reached the desired tenderness, add the frozen corn to the saucepan and continue to simmer until it is heated through, requiring an additional 10 to 15 minutes.
