  • 5 medium potatoes, peeled and cubed
  • 1 (14.5 ounce) can stewed tomatoes
  • 1 cup chopped green chile peppers
  • 1/2 cup chopped onion
  • 2 cups water
  • salt and ground black pepper to taste

Heat a generous amount of oil in a substantial cooking vessel over a moderately high heat setting. Break the beef into smaller pieces and add them to the pot, then cook, stirring constantly, until it develops a rich brown color, taking around 7 to 10 minutes. Remove the excess oil from the pot using a strainer or paper towels.

Reattach the pot to the stovetop and add diced potatoes, crushed tomatoes, sliced chile peppers, and chopped onion to the beef mixture. Pour in a sufficient amount of water, stir everything together, and bring the contents to a rolling boil. Lower the heat and let it simmer for about an hour, allowing the flavors to meld together.
