Ingredients
- 1 pound lean ground beef
- 1 onion, chopped
- 2 (4 ounce) cans whole green chile peppers, drained
- 1 1/2 cups shredded Cheddar cheese, divided
- 4 eggs
- 1/4 cup all-purpose flour
- 1 1/2 cups milk
- salt and pepper to taste
Instructions
1
Preheat your oven to 350 degrees Fahrenheit, or 175 degrees Celsius for a more precise measurement.
2
In a large skillet over medium-high heat, combine ground beef and chopped onions. Stir constantly as they cook until browned, taking approximately 5 to 7 minutes to achieve this. Remove any excess fat that may have accumulated during the cooking process.
3
Place a 7x11-inch baking dish on a flat surface and position a can of chile peppers at the bottom. Sprinkle half of your chosen cheese over the top of the chile peppers, followed by a layer of the meat mixture. Add another can of chile peppers on top of the meat, followed by a sprinkle of cheese.
4
In a separate bowl, whisk together eggs, flour, and milk until you achieve a smooth consistency. Pour the egg mixture over the chile peppers in the baking dish, making sure to cover the entire surface.
5
Season your dish with salt and pepper according to your personal taste preferences. Once you've completed this step, place the dish in the preheated oven and bake for 45 to 50 minutes.
6
After baking, remove the dish from the oven and let it cool for a short period of time before serving.
