- 2 large tomatoes, coarsely chopped
- 3 cups water
- 1 clove garlic, minced
- 1 tablespoon tomato paste
- 1 cube beef bouillon
- salt and pepper to taste
- 1/2 cup uncooked long-grain white rice

Heat the olive oil in a medium-sized saucepan over an intermediate heat setting. Introduce sliced onions into the pan and cook until they become soft and translucent. Combine chopped spinach leaves with the cooked onions, then stir in crushed tomatoes. Permit the vegetable mixture to gently simmer for approximately 5 minutes.

Add 2 cups of water to the saucepan and bring it to a rolling boil. Introduce minced garlic into the mixture, followed by adding a concentrated tomato paste, a cube of bouillon seasoning, salt, and pepper. Gradually reduce the heat to a low simmer and cook for about 15 minutes, or until half of the water has evaporated.

Combine cooked rice with any remaining water and stir it into the spinach mixture. Return the saucepan to a rolling boil, then lower the heat and cover it for 20 minutes. This will allow the rice to become tender and fluffy, or until it reaches your desired level of doneness.
