Greek-Style Roasted Potatoes
Ingredients
  • 2 teaspoons lemon pepper
  • 1/2 teaspoon dried marjoram
  • 1 teaspoon dried basil
  • 1/8 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/4 cup white wine
  • 1 cup water
  • 2 tablespoons olive oil
  • 2 tablespoons Italian salad dressing
  • 2 cloves garlic, minced
  • 1 lemon, juiced
  • 1 tablespoon lemon zest
  • 6 medium potatoes, peeled and quartered
Instructions
1
Combine the dried herbs - lemon pepper, marjoram, basil, thyme, and rosemary - in a small bowl. In another bowl, whisk together the wine, water, olive oil, dressing, minced garlic, lemon juice, and half of the herb blend. Pour this mixture into a medium-sized baking dish. Add sliced or whole potatoes to the dish and coat them evenly with the liquid mixture, finishing off by sprinkling the remaining herb blend on top. Cover the dish and refrigerate for at least 8 hours or overnight.

Next, preheat your oven to 350 degrees Fahrenheit. Bake the potatoes for 1 hour and 15 minutes in the preheated oven, basting them halfway through the cooking time to ensure they stay moist and flavorful.
