  • 1/2 cup extra-virgin olive oil
  • 1 tablespoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 pinch cayenne pepper, or to taste
  • 1/4 cup red wine vinegar
  • 2 cups water, or more as needed
  • 4 ounces feta cheese
  • 1 tablespoon chopped fresh dill

Begin by placing the Corona beans in a large container and cover them with an abundance of water. Allow the beans to rehydrate for 8 hours or overnight, depending on your preference.

Next, transfer the drained beans to a large pot and add 3 quarts of fresh water. Introduce a few bay leaves into the mixture to infuse flavor, then bring the liquid to a rolling boil. Stir gently and gradually decrease the heat to a medium setting, where the beans will simmer for 45 to 60 minutes until they reach your desired level of tenderness.

While the beans are cooking, preheat your oven to 350 degrees F (175 degrees C). This will ensure that the heat is ready for the next step.

Once the beans are done, drain them and transfer them to a large casserole dish. Add a diced red onion, minced garlic, tomato sauce, tomato paste, 1/2 cup of fresh dill, olive oil, salt, pepper, cayenne, vinegar, and water to the dish. Mix everything together until it's well combined.
