  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground coriander
  • 1 (2x1-ft) sheet of parchment or wax paper, folded in half

Heat honey in a sturdy cooking vessel over medium heat, stirring constantly with a wooden utensil. Add sesame seeds, lemon juice, cinnamon, cardamom, and coriander, mixing thoroughly until the mixture is light and golden.

Transfer the dough to a baking sheet coated with half of the parchment or wax paper, then fold over the remaining paper to cover the dough. Roll out the dough between the papers to a 1/4 inch thickness, allowing it to relax.

Allow the dough to rest and cool before proceeding. Using a straightedge and a sharp cutting tool, cut the dough into bars or squares of your preferred shape. To serve, carefully remove the paper covering and indulge in your sesame bar
