Greek Rice Pudding

  • 1/2 cup uncooked short-grain white rice
  • 2 cups whole milk
  • 4 tablespoons white sugar
  • 4 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon, or more to taste

Boil water and rice in a saucepan until it reaches a rolling boil. Then, lower the heat to a low simmer and cook for 30 minutes, stirring occasionally until the rice is soft and most of the water has been absorbed.

Combine 2 cups of milk, sugar, and a pinch of salt in the saucepan. Increase the heat to its highest setting and bring the mixture to a boil.

In a separate bowl, whisk together the remaining 1/2 cup of milk and cornstarch until smooth. Add this mixture to the boiling rice-milk mixture along with a few drops of vanilla extract. Stir until everything is well combined and the mixture has cooled slightly.

Transfer the rice pudding to individual serving dishes and sprinkle with a generous amount of cinnamon. Allow it to cool down to room temperature, which should take about 30 minutes, before refrigerating it for at least 4 hours to chill thoroughly.
