- 8 small red onions, cut into thin wedges
- 3 bay leaves
- 2 cups crushed tomatoes
- 1/2 teaspoon sea salt

First, put the octopus pieces into a large cooking vessel and cover it. Then, cook over an elevated heat level until the octopus starts to release its natural juices, taking around 10-15 minutes. Next, remove the cover and continue to cook until the liquid has significantly decreased in quantity, resulting in approximately 3-4 tablespoons of liquid.

After that, drizzle the octopus with olive oil and stir in the sautéed onions along with some bay leaves. Continue to cook and mix until the onions have softened, approximately taking around 10 minutes.

Subsequently, add the tomatoes, salt, and pepper to the mixture. Reduce the heat level to a moderate-low setting, cover it again, and let it simmer until the octopus is tender and the sauce has thickened to a suitable consistency, which should take around 25 minutes.
