Greek New Year Cake

  • 1 cup warm milk (110 degrees F/45 degrees C)
  • 1/2 teaspoon baking soda
  • 1 tablespoon fresh lemon juice
  • 1/4 cup blanched slivered almonds
  • 2 tablespoons white sugar

Preheat your oven to 350 degrees Fahrenheit, or 175 degrees Celsius. Next, take a generous amount of cooking spray and coat the inside of a 10-inch round cake pan.

In a medium-sized bowl, cream together sugar and butter until they reach a lighter color; then, incorporate flour into the mixture until it resembles coarse crumbs. Gradually add eggs one at a time, ensuring each egg is fully incorporated before adding the next.

Meanwhile, whisk together baking powder and milk in a separate bowl. Once combined, pour this mixture into the egg mixture, stirring until everything is well blended.

In another small bowl, whisk together lemon juice and baking soda. Add this mixture to the batter, stirring until it's fully incorporated.

Pour the cake batter into the prepared 10-inch round cake pan.

Bake the cake in a preheated oven for 20 minutes, or until it's done. Remove the cake from the oven and sprinkle chopped nuts and sugar evenly over its surface.

Return the cake to the oven for an additional 20-30 minutes, or until it springs back when touched.
