- 1 1/2 pounds fresh green beans, trimmed
- 4 medium tomatoes, pureed
- 2 medium yellow potatoes, peeled and cut into wedges
- 1/2 teaspoon salt, or to taste
- ground black pepper to taste
- 1 pinch white sugar
- 1 cup water, or as needed

Preheat a large saucepan over medium heat, allowing the olive oil to melt and warm up. Introduce the sliced onion into the saucepan and cook until it becomes translucent, approximately 5 minutes. Combine the green beans with the onion mixture and stir until they are evenly coated in oil. Continue to cook, occasionally stirring, for 2-3 minutes. Introduce the puréed tomatoes, diced potatoes, salt, pepper, and sugar into the saucepan. Stir thoroughly to combine all ingredients, then add sufficient water to just cover the green beans.

Cover the saucepan partially with a lid. Bring the mixture to a gentle simmer over medium-low heat and cook slowly until the green beans and potatoes are tender, approximately 25-30 minutes. Uncover the saucepan towards the end of cooking to help reduce the sauce if it becomes too watery.
