Greek Feta Cheese Pie
Ingredients
  • 14 ounces feta cheese, crumbled
  • 2 eggs
  • 10 sheets phyllo dough, thawed if frozen
  • 1/2 cup olive oil
Instructions
1
Preheat your oven to a medium-high heat setting of 350 degrees Fahrenheit (175 degrees Celsius).
2
Next, take two round cake pans and apply a thin layer of grease to their surfaces.
3
Meanwhile, combine crumbled feta cheese and beaten eggs in a mixing bowl to create the pie's filling.
4
Place one sheet of phyllo dough on a flat surface and generously brush it with olive oil.
5
Top the oiled phyllo sheet with another layer, and brush it again with oil.
6
Repeat this process a total of four times, but leave the top layer without brushing it.
7
Transfer the stacked phyllo sheets to one of the prepared cake pans, allowing some of the dough to drape over the edges.
8
Try not to make it too perfect, as you want some natural folds and wrinkles in the phyllo.
9
Spread half of the filling over the phyllo, covering it evenly.
10
Fold the excess phyllo over the filling, allowing some of the dough to naturally fold and wrinkle.
11
Place another sheet of phyllo loosely over the top, brush it with oil, and use your hands to smooth out the sides of the cake pan.
12
Repeat steps 3 and 4 with the remaining phyllo, oil, and filling to assemble the second pie.
13
Place both pies in the preheated oven and bake until the tops are a deep golden brown, taking approximately 45 to 55 minutes.
14
Allow the pies to cool slightly before slicing and serving warm or at room temperature.
