  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon garlic powder
  • 1/4 cup olive oil
  • 1 drizzle olive oil, or as needed
  • 2 tablespoons chopped Italian parsley
  • 2 tablespoons chopped fresh mint
  • 1 cup full-fat Greek yogurt
  • 8 ounces feta cheese
  • 1 teaspoon finely crushed garlic, or to taste
  • 1 tablespoon chopped fresh mint
  • 1 teaspoon lemon zest

Acquire all necessary ingredients.

Divide chicken breasts in half lengthwise, making sure to cut them into two equal halves.

Combine red wine vinegar, kosher salt, black pepper, cayenne, thyme, oregano, rosemary, and garlic powder in a bowl. Add the chicken breasts and mix until they are completely and evenly coated with the marinade. Next, pour in ¼ cup of olive oil and continue to coat the chicken thoroughly.

Cover the bowl with plastic wrap and refrigerate the mixture for a period of time ranging from 1 to 12 hours, but ideally between 2 to 3 hours.

In a separate bowl, whisk together Greek yogurt and crumbled feta cheese until light and fluffy. Add minced garlic, chopped mint, and grated lemon zest to the mixture and whip until well combined.

Preheat a charcoal grill until the coals are hot and white.

Grill the chicken over the hot coals for approximately 4 minutes per side, continuously flipping and cooking until it reaches an internal temperature of at least 150 degrees F (65 degrees C). Remove the chicken from the grill and let it rest for about 5 minutes.

Arrange whipped feta on a serving platter or plate and place the grilled chicken over it.
