Greek Cheese Pie
Ingredients
  • 6 tablespoons butter
  • 1/2 cup all-purpose flour
  • 2 cups milk
  • 1 teaspoon salt
  • 1 pinch nutmeg
  • 1 pound feta cheese
  • 4 large eggs, beaten
  • 3 ounces grated Greek Kefalotiri cheese
  • 1/4 cup chopped fresh parsley
  • 3/4 cup melted butter for brushing
  • 3/4 pound phyllo dough, thawed

Heat a small saucepan over medium-low heat, adding 6 tablespoons of butter and stirring until it melts. Combine the melted butter with flour in the saucepan, whisking continuously to form a smooth paste. Cook for 2 minutes, stirring constantly with a spoon.

Gradually pour in milk into the saucepan while continuously whisking to avoid lumps. Continue cooking for 5-10 minutes, stirring occasionally, until the white sauce thickens and becomes bubbly.

Crush feta cheese in a large bowl using a fork, then combine it with beaten eggs, grated kefalotiri, and chopped parsley. Pour the hot white sauce into the bowl with the cheese mixture and mix until well combined.

Preheat your oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish with melted butter. Cover the dish with a sheet of phyllo dough, brushing it with butter, and keep the remaining sheets covered until you're ready to use them.

Repeat the process of brushing phyllo dough with butter and placing it in the baking dish, using half of the sheets. Continue this process until you've used all but 1/2 of the phyllo, brushing each sheet with butter as you go.

Pour the cheese filling into the prepared baking dish. Place the remaining phyllo sheets on top of the filling, brushing each with butter. Brush the top sheet with butter and use a sharp knife to cut it into strips, about 3 inches wide.

Bake the dish in your preheated oven for approximately 45 minutes, or until the pastry is golden brown and crispy. Remove it from the oven and let it stand for 5 minutes before cutting into squares and serving hot.
