- 1 cup butter, melted and divided
- 2 tablespoons chopped Italian flat leaf parsley

Heat the butter in a saucepan over medium heat, stirring occasionally until it reaches a melting state. Combine the flour with the melted butter using a whisk, ensuring a smooth consistency. Gradually pour in the hot milk while stirring continuously to prevent lumps from forming. Continue cooking, stirring constantly, until the sauce achieves a suitable thickness that coats a metal spoon. Add salt and white pepper to taste, then remove the saucepan from the heat and let it cool down.

Once the sauce has cooled, incorporate the feta cheese, egg yolks, Monterey jack cheese, 3 tablespoons of melted butter, and parsley into the mixture. Preheat your oven to 375 degrees F (190 degrees C). Cut the phyllo dough sheets into strips, approximately 3 inches wide. Use one stack at a time and cover the rest with a damp towel to maintain their moisture.

Lay out one piece of phyllo dough at a time and brush it with butter. Place about 1 teaspoon of the cheese mixture onto one end of the dough strip. Fold one corner up to match the other edge, creating a triangle shape that continues until you reach the end of the strip. Place the folded dough on a baking sheet and proceed with the remaining strips.
