- 1/4 cup grated Parmesan cheese
- 1 dash ground nutmeg

- 3 large eggs, lightly beaten
- 1/2 cup butter
- 1/2 cup all-purpose flour
- 3 cups milk
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup grated Parmesan cheese
- 1 large egg, lightly beaten
- 1 egg yolk

Gather all the necessary ingredients and prepare your workspace. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease a 9x13-inch casserole dish with cooking spray to prevent sticking.

Prepare the meat sauce by melting butter in a skillet over medium heat. Add sliced onion and minced garlic; cook and stir gently until the onion is soft, taking about 3 to 5 minutes. Increase the heat and add ground beef; cook and stir until it's browned and crumbly, approximately 5 minutes. Stir in canned tomatoes, wine, broth, tomato paste, chopped parsley, cinnamon, salt, pepper, and ground clove. Cover the skillet and simmer over low heat for 20 minutes.

While you're waiting for the meat sauce to prepare, cook your pasta according to package instructions. Bring a large pot of lightly salted water to a boil and add the pasta. Cook until it's tender yet still firm to the bite, taking around 8 to 10 minutes. Drain the pasta and set it aside.

In a separate bowl, combine melted butter, 1/4 cup grated cheese, nutmeg, salt, and pepper. Add 2 eggs to the bowl and toss everything together until well combined. Set this mixture aside briefly.

Make a béchamel sauce by melting butter in a saucepan over medium-low heat. Add flour; cook and stir for 2 minutes, creating a smooth paste. Pour in milk and bring the mixture to a boil, stirring constantly to prevent lumps. Season with nutmeg, salt, and pepper. Allow the sauce to cool slightly before stirring in 1 cup grated cheese, beaten egg, and egg yolk. Finally, stir 1/2 cup of béchamel sauce into the meat sauce.

To assemble your pastitsio, arrange the cooked pasta in the prepared baking dish so that all of the noodles are lined up neatly and as level as possible for a visually appealing presentation. Spoon the meat sauce over pasta; top with remaining béchamel sauce, spreading evenly to cover the entire surface. Sprinkle the remaining 1/2 cup grated cheese on top.

Bake your pastitsio in a preheated oven at 350 degrees Fahrenheit (175 degrees Celsius) until it's bubbling and golden brown on top, approximately 50 minutes.
