Ingredients
- 1 teaspoon paprika
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon dried parsley
- 1/2 teaspoon dried oregano
- 1 teaspoon salt
- 1 teaspoon pepper
- 4 boneless, skinless chicken breast halves
- 1/4 cup duck sauce
- 1/4 cup marinara sauce
- 1 teaspoon mango hot sauce
- 3/4 cup fresh pink grapefruit juice, divided
- 1 cup Italian seasoned bread crumbs
- 1 ripe nectarine, pitted and sliced
Instructions
1
Preheat your oven to a hot temperature of 375 degrees Fahrenheit or 190 degrees Celsius.
2
Cover the bottom of your baking dish with a layer of parchment paper to prevent sticking.
3
Mix together paprika, onion powder, garlic powder, parsley, oregano, salt and pepper in a large bowl. Combine these dry ingredients with chicken breasts to coat them evenly.
4
In another bowl, blend together duck sauce, marinara sauce and mango hot sauce with 1/4 cup of grapefruit juice. Coat the chicken breasts thoroughly with this savory mixture.
5
Place a layer of bread crumbs in a shallow dish and coat the chicken breasts evenly with this crunchy topping.
6
Arrange nectarine slices around the edges of your baking dish to add a pop of color and flavor.
7
Place the chicken breasts in the preheated oven for 15 minutes. Flip the chicken over and pour another 1/2 cup of grapefruit juice over it, then continue cooking for an additional 15 minutes or until the chicken is cooked through.
