Ingredients
- 4 cups chopped tomatoes
- 2 cups lima beans
- 2 cups chopped okra
- 2 cups chopped red potatoes
- 1 cup corn
- 1 cup green beans
- 1/2 cup chopped carrots
- 1 (6 ounce) can tomato paste
- 4 cups chicken stock
- 1 pound ground beef
- 1/2 tablespoon garlic powder
- 1/2 tablespoon celery salt
- 1/2 tablespoon onion powder
- 1 small onion, chopped
- 2 cloves garlic, crushed, or more to taste
- 3 tablespoons butter
Instructions
1
Combine a diverse array of vegetables including tomatoes, lima beans, okra, potatoes, corn, green beans, and carrots in a large cooking vessel.
2
Pour chicken stock over the vegetable mixture and heat it up on medium heat until it reaches a boiling point. Gradually decrease the heat to allow the vegetables to begin tenderizing, approximately 15 minutes.
3
Prepare ground beef by sprinkling it with a blend of aromatic seasonings including garlic powder, celery salt, and onion powder. Set the seasoned ground beef aside for later use.
4
Melt butter in a skillet over medium-high heat. Add sliced onions and minced garlic to the pan once the butter has stopped bubbling, then cook and stir for 1 minute. Distribute the ground beef evenly throughout the pan. Cook until it has developed a pleasing brown color on all sides, stirring minimally to achieve mostly medium-sized chunks. Drain the skillet and add the cooked ground beef, along with its accompanying onions and garlic, to the vegetable mixture.
5
Combine the heated soup mixture in a large cooking vessel. Bring it to a boil, then gradually decrease the heat to allow everything to cook down together, approximately 1 to 2 hours.
