Ingredients
- 4 potatoes, cut into 1/2-inch cubes
- 1 onion, cut into 1/2-inch pieces
- 1/4 cup butter, divided
- 6 cups cooked lobster meat, cut into bite-sized pieces
- 1 cup heavy cream
- 6 cups milk
- 1 teaspoon white sugar
- salt and pepper to taste

Combine diced potatoes and sliced onion in a large, deep saucepan. Fill the saucepan with salted water, making sure that the potatoes and onion are completely submerged. Place the saucepan over high heat and bring to a rolling boil, then gradually decrease the heat to a low simmer, covering the saucepan with a lid. Allow the potatoes to become tender, taking around 10 minutes. Remove from heat and drain off the water.

During this time, melt half of the butter in a large skillet over medium-high heat. Add the cubed lobster to the skillet and cook until the edges start to develop a golden hue, approximately 5 minutes.

Once the potatoes have been drained and returned to the saucepan, stir in the remaining butter, lobster, heavy cream, milk, and granulated sugar. Reheat over low heat, stirring occasionally, until hot and well combined. Season with salt and pepper to taste before serving.
