Ingredients
- 8 slices bacon, cut into 1/2 inch pieces
- 1 large onion, chopped
- 2 (28 ounce) cans diced tomatoes
- 1 (14 ounce) can tomato sauce
- 1 teaspoon white sugar, or more to taste
- 1/2 teaspoon ground black pepper, or to taste
- 1 tablespoon butter

Cook the bacon in a Dutch oven over medium heat, stirring it every now and then, until the fat begins to melt and becomes more liquidy, approximately 2 minutes.

Add the sliced onion to the pot; continue cooking and stirring until the onion becomes tender and loses its initial firmness, roughly 5 minutes.

Introduce the diced tomatoes and tomato sauce into the pot; add a pinch of sugar and a few grinds of black pepper to taste.

Allow the mixture to simmer, reducing the sauce by a significant amount - roughly three-quarters of its original volume - until it reaches this level, taking anywhere from 30 to 45 minutes.

Just before serving, stir in a pat of butter to add richness and depth to the dish
