Ingredients
- 2 tablespoons butter
- 1 clove garlic, crushed
- 2 shallots, minced
- 1/2 cup dry sherry or dry white wine
- 24 freshly shucked oysters, oyster liquor reserved
- 1 1/2 cups whole milk
- 1 1/2 cups heavy cream
- 2 tablespoons chopped fresh flat-leaf parsley
- sea salt to taste
- 1 pinch sweet paprika
- 1 cup oyster crackers
Instructions
1
Melt butter in a large saucepan over medium heat, allowing it to develop a rich golden color.
2
Add minced garlic and sauté for a few minutes until the butter reaches its desired shade of brown.
3
Next, add sliced shallots to the saucepan and stir until they're fully incorporated with the browned butter.
4
Continue cooking the shallots, stirring occasionally, until they become translucent and fragrant, typically taking 5 to 7 minutes.
5
Now, add a splash of sherry wine to the saucepan and bring it to a rolling boil, scraping any stubborn browned residue from the bottom of the pan.
6
Reduce the heat and let it simmer for 3 to 5 minutes, allowing the liquid to thicken by half.
7
Add a splash of oyster liquor, milk, and heavy cream to the saucepan; stir until well combined.
8
Gradually reduce the heat to a low simmer and gently add oysters to the mixture, cooking until their edges begin to curl up slightly, about 3 minutes.
9
Remove the saucepan from heat and stir in chopped parsley; season with a pinch of sea salt to suit your taste.
10
Transfer the mixture to individual serving bowls and garnish with a sprinkle of sweet paprika and crunchy oyster crackers.
