Ingredients
- 1 1/2 cups quick-cooking oats
- 1 1/4 cups all-purpose flour
- 1 1/4 cups brown sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 3/4 cup butter
- 1/2 pound dates, pitted and chopped
- 3/4 cup water
- 1 tablespoon vanilla extract

Preheat your oven to 350 degrees Fahrenheit, or 175 degrees Celsius.

Take a bowl and combine rolled oats, all-purpose flour, brown sugar, baking soda, and baking powder. Use a pastry blender to break down the butter into small pieces until the mixture resembles coarse crumbs.

Press half of this oat mixture evenly into a 9x13-inch baking dish.

To prepare the date filling, combine pitted dates and water in a small saucepan over medium heat. Allow them to soften and break apart easily with a spoon, taking about 10 minutes. Remove from heat and stir in vanilla extract.

Spoon the date mixture evenly over the oat mixture in the baking dish, followed by a layer of remaining oat mixture on top. Press this final layer into place.

Bake in the preheated oven for 30 minutes, or until the crust is golden brown at the edges. Remove from the oven and let cool completely on a wire rack before cutting into bars.
