- 2 cups chopped red onion
- 2 slices bacon, chopped
- 1 1/4 cups chicken stock
- 1/4 cup apple cider vinegar
- 2 tablespoons brown sugar
- 1 pinch red pepper flakes
- 4 pounds collard greens - rinsed, trimmed and chopped
- salt and ground black pepper to taste

Heat a large pot over medium-high heat, adding sliced onion and diced bacon. Cook until the onion becomes translucent and softens in texture, taking around 5 to 7 minutes.

Next, pour in the chicken stock, add a splash of vinegar, and sprinkle brown sugar into the mixture. Stir constantly until the brown sugar has fully dissolved, which should take about 2 to 3 minutes.

Now, add half of the collard greens to the pot and lower the heat to a more moderate level. Continue cooking until the greens have started to lose their firmness and are slightly tender, approximately 10 minutes.

Add the remaining collard greens to the pot and gently stir them in with the other ingredients. Then, reduce the heat even further to a low setting and let the mixture simmer for about 30 minutes, or until it reaches your desired level of tenderness. Finally, add a pinch of salt and pepper to season the dish.
