Bring the mixture to a rolling boil over high heat, then gradually decrease the intensity of the heat to a moderate-low setting, cover the container, and let it cook until the potatoes are tender, approximately 20 minutes. Remove from heat and allow to sit for a minute or two before mashing.

Next, melt the butter in a skillet over medium heat; cook the celery and onion in the butter until the onion has transformed into a translucent state, taking around 5 to 7 minutes. Combine this mixture with the mashed potatoes, adding a pinch of flavor and allowing it to cool until just warm.
