- 1 1/4 cups instant corn masa flour (such as Maseca®)
- 1/2 teaspoon baking soda
- 1 pinch salt
- 1/2 cup water, or as needed
- 2 tablespoons vegetable oil, or as needed

Combine corn masa flour, baking soda, and salt in a mixing vessel. Gradually add small amounts of water as you mix until the dough comes together and forms a solid, cohesive mass. Split the dough into uniform portions and use your hands to shape them into small spherical shapes. Flatten each sphere slightly into a circular disk, approximately 1/4 inch thick.

Preheat a flat griddle or comal over medium heat. Place the dough circles on the hot surface and cook for 3 minutes, flipping them over to achieve a light brown color, slight puffing, and even cooking on the outer edges.

In a separate skillet, heat oil over medium heat. Cook gorditas in batches if necessary, until they turn golden brown on both sides, taking 1 to 2 minutes per side. Remove them from the skillet and drain on paper towels before serving hot.
