Grandma's Croatian Nut Roll
Ingredients
  • 1/4 cup warm water
  • 1 (.25 ounce) package active dry yeast
  • 3/4 cup lukewarm milk
  • 1/4 cup white sugar
  • 1/4 cup vegetable shortening (such as Crisco®)
  • 1 egg, beaten
  • 1 teaspoon salt
  • 3 1/2 cups all-purpose flour, or more as needed
  • 1/2 cup brown sugar
  • 1/4 cup butter, softened
  • 1 egg
  • 1/4 cup milk
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon lemon extract
  • 2 cups finely chopped walnuts
Instructions
1
Create a dough mixture: Combine warm water and yeast in a large bowl, allowing them to mingle together. Allow the mixture to relax until the yeast has softened and formed a smooth, velvety texture, approximately 5 minutes.
2
Combine lukewarm milk, white sugar, shortening, egg, and salt in a separate bowl. Gradually add the ingredients to the yeast mixture, stirring until a smooth and manageable dough forms.
3
Transfer the dough onto a lightly dusted surface and permit it to rest for 10 minutes. Knead the dough until it becomes smooth, elastic, and easy to handle, approximately 8 minutes. Shape the dough into a spherical form.
4
Place the dough in a large, lightly oiled bowl and ensure it is evenly coated. Cover the bowl with a damp cloth; allow it to rise in a warm environment until it has doubled in size or when pressed, a hole remains, approximately 2 hours.
5
Punch down the dough and transfer it onto a lightly floured surface. Form the dough into a spherical shape and permit it to rest for 15 minutes.
6
Prepare the filling: In a separate bowl, combine brown sugar, butter, and egg. Blend until smooth and creamy. Add milk, vanilla extract, and lemon extract; stir until well combined. Incorporate walnuts into the mixture.
7
Roll out the dough on a large, floured cloth into a 20x30-inch rectangle. Spread the walnut filling evenly over the dough, ensuring it reaches the edges. Roll up the dough along the long edge like a jelly roll and pinch the edges to seal it.
8
Shape the rolled dough into a snail shape by coiling it around itself.
9
Preheat your oven to 325 degrees F (165 degrees C). Grease a 9x13x2-inch baking sheet. Place the shaped dough on the prepared sheet and allow it to rise until an impression remains when pressed, approximately 1 hour.
10
Bake the dough in a preheated oven until the top is golden brown, 40 to 45 minutes.
