Grandma's Anise Waffle Cookies

  • 2 1/2 cups white sugar
  • 1/2 cup vegetable oil
  • 1/2 cup butter, melted and cooled
  • 1 teaspoon anise oil, or more to taste
  • 5 cups all-purpose flour, or as needed
  • 3 teaspoons baking powder
  • 1 teaspoon salt

Combine eggs, sugar, vegetable oil, butter, and anise oil in the bowl of a stand mixer fitted with a paddle attachment. Blend until smooth and thoroughly incorporated. Combine 1 cup of flour, baking powder, and salt in the bowl and mix until just combined. Gradually add the remaining 1 cup of flour, a cup at a time, mixing on low speed until the mixture has a thick pancake-like consistency.

Heat a pizzelle cooking iron according to the manufacturer's guidelines. Place a small amount of dough onto each plate of the cooking iron and shut the lid. Cook for just enough time to see steaming slow down, approximately 10-20 seconds. Continue with the remaining batches of batter.
