- 8 small Granny Smith apples, or as needed
- 1/2 cup unsalted butter
- 3 tablespoons all-purpose flour
- 1/2 cup white sugar
- 1/2 cup packed brown sugar
- 1/4 cup water
- 1 (9 inch) double-crust pie pastry, thawed

Gather all the necessary ingredients and prepare them for use. Remove the skin and core of the apples, then slice them very thinly. Set these sliced apples aside for now.

Preheat your oven to a high temperature of 425 degrees Fahrenheit (220 degrees Celsius).

Melt butter in a saucepan over medium heat, stirring occasionally. Add flour and mix until it forms a smooth paste; cook for about 1 to 2 minutes, or until the mixture is fragrant. Add both types of sugar and water; bring the mixture to a boil, stirring constantly. Reduce the heat to low and let it simmer for 3 to 5 minutes.

Press one piece of pastry into the bottom and up the sides of a standard-sized pie dish. Roll out the remaining pastry so that it will hang over the edges of the pie by about half an inch. Cut this extra pastry into eight equal-sized strips.

Place the sliced apples at the bottom of the pie crust, forming a slight mound. Arrange four pastry strips vertically and evenly spaced over the apples, using longer strips in the center and shorter strips at the edges.

Create a lattice crust: Fold the first and third pastry strips all the way back so they're almost falling off the pie. Place one of these strips perpendicularly over the second and fourth strips, then unfold them back into their original position.

Fold the second and fourth vertical pastry strips back. Place one of these three unused strips perpendicularly over top. Unfold the second and fourth strips back into their original position.

Repeat Steps 6 and 7 to weave in the last two strips of pastry. Fold and trim any excess dough at the edges as necessary, and pinch to secure.

Slowly pour the sugar-butter mixture over the lattice crust, making sure it seeps over the sliced apples. Brush some of this mixture onto the lattice, but make sure it doesn't run off the sides.

Bake the pie in the preheated oven for 15 minutes. Reduce the temperature to a moderate heat of 350 degrees Fahrenheit (175 degrees Celsius) and continue baking until the apples are soft, taking about 35 to 45 minutes.
