- 1/2 cup sliced carrots
- 1/2 cup sliced celery
- 1/4 teaspoon freshly ground black pepper
- 1 pinch cayenne pepper
- 1/2 cup frozen peas, thawed
- 1 teaspoon fresh thyme leaves
- 1 recipe pastry pie dough
- 1 large egg, beaten
- 2 teaspoons water

Gather all the necessary ingredients beforehand. Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius).

Melt butter in a 12-inch cast iron skillet over medium-high heat. Add diced onion and a pinch of salt, stirring constantly until the onions begin to soften and the edges start to develop a golden brown color, approximately 3-4 minutes.

Add chicken breast and cook, stirring occasionally, until the chicken loses its pink hue and starts to brown in patches, around 3-4 minutes.

Sprinkle flour over the top of the mixture and cook for about 2 minutes, stirring frequently. Then, pour in the broth and bring the mixture to a gentle simmer, using a spatula to scrape the bottom of the pan. Stir in diced carrots, celery, black pepper, and a pinch of cayenne.

Cook the mixture over medium heat, stirring occasionally, until it reaches your desired consistency, typically 5-10 minutes. If you prefer a thick and sticky filling after baking, reduce the mixture until it coats the back of a spoon. For a saucier filling, simply stop reducing the mixture altogether.

Turn off the heat and stir in frozen peas and a sprinkle of thyme. Season with salt to taste and set aside until needed.

Roll out the pie or pastry dough into a circle approximately 14 inches in diameter. Fold over an additional 1/2 inch of dough all the way around and crimp the edge to create a decorative scalloped design. Use a knife or a pastry puncher to cut out a 1-inch hole in the center of the dough.

Place the skillet on top of a sheet pan, just in case the filling bubbles over during baking. Carefully position the dough over the filling and adjust it until it's centered. Press the crust gently into the filling. If desired, brush the top of the dough with an egg wash for added flavor.

Bake in the preheated oven until the crust is golden brown and the filling is bubbling, approximately 40 minutes. Allow it to rest for 5 minutes before serving.
