Ingredients
- 2 pounds finely ground pork fat
- 2 pounds finely ground pork
- 2 onions, finely chopped
- 4 cups water
- 1 teaspoon ground cloves
- 3/4 teaspoon ground nutmeg
- salt and black pepper to taste
Instructions
1
Combine pork fat, ground pork, chopped onions, water, whole cloves, and ground nutmeg in a large cooking vessel. Add salt and pepper to taste, adjusting the seasoning accordingly.
2
Heat the mixture over high heat until it reaches a rolling boil, then gradually decrease the heat to a lower temperature and let it simmer for at least 1.5 hours, or until the meat is tender.
3
Every 15 minutes, use a masher to mix and blend the ingredients together, allowing the flavors to meld and intensify.
4
As needed, add more water to prevent the mixture from drying out during the prolonged cooking process.
5
Once you've completed the cooking time, allow the liquid to evaporate as much as possible before serving. Be cautious not to let it burn, as this can ruin the dish.
6
Refrigerate the cooked mixture overnight to allow it to chill and set.
7
The next day, remove the solidified fat layer from the top of the mixture and discard it, or mix it back into the meat for a richer, creamier texture.
