  • 2 shallots, minced
  • 1 cup heavy whipping cream
  • 4 cups fresh spinach
  • 1/2 cup Gorgonzola cheese
  • salt and freshly ground black pepper to taste

Boil a substantial container of salted water until it reaches a rolling boil. Submerge fusilli pasta in the boiling water, occasionally stirring to ensure even cooking, and continue until it is cooked through but still retains a slight firmness in the center, approximately 12 minutes.

During this time, melt butter in a medium-sized skillet over moderate heat and cook the shallots until they become soft and lose their raw appearance, around 3 to 5 minutes. Introduce heavy cream into the skillet and cook until it reaches a warm temperature, also taking 3 to 5 minutes. Add fresh spinach leaves and crumble Gorgonzola cheese into the mixture. Season with salt and pepper to taste, then continue cooking until the spinach has wilted and the sauce has thickened, roughly 4 minutes.
