Goat Cheese and Pesto Puff Pastry Tree
Ingredients
  • 2 tablespoons sun-dried tomato pesto
  • 2 tablespoons soft goat cheese (such as Chavrie®)
  • 2 sheets puff pastry
  • 2 tablespoons freshly grated Pecorino-Romano cheese, divided
  • 1 egg, beaten
  • 1/2 teaspoon dried oregano

Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).

To begin, line a baking sheet with parchment paper for easy cleanup.

Next, combine sun-dried tomato pesto and goat cheese in a small bowl and thoroughly mix until well combined.

Unroll one puff pastry sheet onto the prepared baking sheet, making sure it's centered and smooth.

Cut away two strips at the bottom of the pastry sheet, approximately one inch wide and tall, to create a tree trunk.

Cut the puff pastry diagonally from top to bottom, removing excess pastry on either side of the triangle.

Spread a thin layer of the pesto mixture evenly across the pastry, making sure to cover all sides.

Sprinkle a small amount of Pecorino-Romano cheese, about one tablespoon, on top of the pesto layer.

Roll up the second puff pastry sheet and carefully place it at the tip of the triangle, unrolling it as you go towards the bottom.

Press down gently on the pastry and carefully cut away the sides to match the first triangle, removing excess pastry.

Cut two-thirds-inch thick branches into the sides of the triangle from both sides, leaving a small gap lengthwise in the center all the way to the tip.

Twist the branches away from you, aiming for two turns on the lower branches as you move up the tree.

Continue twisting and moving up the tree, trying to get in two turns on each lower branch as you go.

Brush the entire tree with beaten egg for a golden glaze.

Sprinkle the remaining one tablespoon of Pecorino-Romano cheese and dried oregano evenly across the tree.

Bake in the preheated oven until deep golden brown, approximately 20 minutes.
