- 1 teaspoon fennel seeds
- 4 ounces goat cheese
- 1 tablespoon olive oil, or as needed

Begin by adding water to a large container, then sprinkle yeast on top. Allow it to sit for a short while, giving the yeast time to break down and become active. Next, combine oil, salt, and flour in a bowl, mixing everything together until you have a smooth dough. When the dough becomes too difficult to stir with your hands, transfer it onto a surface dusted with flour and knead for around 5 minutes. Place the dough in an oiled bowl, cover it with a clean cloth, and let it rest for approximately 45 minutes.

Set aside the chopped figs in a small bowl, then pour boiling water over them. Allow this mixture to sit for about 10 minutes before draining and chopping the figs further. Meanwhile, heat a tablespoon of olive oil in a skillet over medium heat and add sliced onions. Cook the onions, stirring occasionally, until they have softened and become translucent. Reduce heat to low and season with salt. Continue cooking the onions until they have darkened in color, taking around 5 to 10 minutes. Add thyme, fennel seeds, and the chopped figs to the skillet, then remove it from heat.

Preheat your oven to 450 degrees Fahrenheit (220 degrees Celsius). Take the pizza dough and punch it down, then stretch it into a circle about 1/4 inch thick. Place the dough on a lightly greased pizza pan or baking sheet, brushing it with any remaining olive oil. Spread the onion and fig mixture evenly over the crust, leaving some space between each topping to avoid overcrowding. Finally, sprinkle pieces of goat cheese over the top.

Bake the pizza in a preheated oven for 15 to 18 minutes, or until the crust has turned golden brown at its edges.
