Ingredients
- 2 tablespoons sesame seeds
- 1 1/2 cups gluten-free soy sauce (tamari)
- 2/3 cup white sugar
- 1/2 cup chopped green onions
- 1/4 cup sesame oil
- 2 tablespoons minced garlic
- 1/2 teaspoon red pepper flakes
- 5 pounds Korean short ribs (cut flanken-style into 1/2-inch slices across the bones)
Instructions
1
Heat a small skillet over medium heat and toast sesame seeds until they turn lightly brown, approximately 3 to 5 minutes.
2
Combine toasted sesame seeds with soy sauce, sugar, green onions, sesame oil, garlic, and red pepper flakes in a saucepan. Bring the mixture to a simmer over medium-low heat, stirring constantly, until all the flavors meld together, roughly 10 minutes. Allow the mixture to cool down completely before proceeding, taking around 15 minutes.
3
Place short ribs in large plastic bags and cover them with the cooled marinade. Seal the bags and refrigerate, ensuring they marinate for at least 1 hour or overnight to achieve maximum flavor.
4
Prepare the grill by preheating it over medium heat and lightly oiling the grates.
5
Remove short ribs from their marinade, discarding the excess liquid, and cook on the preheated grill until browned on both sides, approximately 5 minutes per side.
