Gluten-Free Italian Meatball Bites
Ingredients
  • 1/2 cup milk
  • 1 egg
  • 1 cup gluten-free Italian bread crumbs
  • 1 1/2 pounds ground beef
  • 1/4 onion, minced
  • 1 clove garlic, minced
  • 1 sprig fresh parsley, chopped
  • cooking spray
  • 1 (28 ounce) jar tomato sauce, or as needed
Instructions
1
Combine milk and egg in a large bowl and whisk until well incorporated. Gradually incorporate bread crumbs to form a smooth, cohesive mixture. Add ground beef, finely chopped onion, minced garlic, and chopped parsley to the bowl, and use your hands to mix until just combined, taking care not to overmix.
2
Next, preheat the oven to 350 degrees F (175 degrees C), ensuring it reaches a consistent temperature. Spray a baking sheet with cooking spray to prevent sticking.
3
Using an ice cream scoop, measure out the meatballs and then roll them into balls using dampened hands. Place the rolled meatballs onto the prepared baking sheet, leaving space for even cooking.
4
Place the baking sheet in the preheated oven and bake until the meatballs are no longer pink in the center, indicating they have reached a safe internal temperature of at least 160 degrees F (70 degrees C). This should take approximately 30 minutes.
5
While the meatballs are baking, heat the tomato sauce in a saucepan over medium heat. Bring the sauce to a gentle simmer.
6
Once the meatballs are done, add them to the heated tomato sauce and let it simmer, uncovered, for an additional 30 minutes.
