  • 1/3 cup brown sugar
  • 6 tablespoons unsalted butter, melted

Collect and prepare all the necessary components.

Preheat your oven to 375 degrees Fahrenheit (or 190 degrees Celsius, if you prefer metric).

Set aside a batch of 12 to 18 whole gingersnap cookies. Crush the remaining cookies into fine crumbs, which should amount to about 1 and a half cups in total. Keep the remaining cookies aside for future use.

Combine the gingersnap crumbs, brown sugar, and melted butter in a bowl until they are thoroughly incorporated.

Press the mixture into the bottom of a 9-inch springform pan to create the crust.

Arrange the whole gingersnap cookies upright around the border of the springform pan, pressing them firmly into the base and overlapping them slightly if necessary, so that they stand upright.
