Ingredients
- 2 1/4 cups all-purpose flour
- 2 teaspoons ground ginger
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 cup packed brown sugar
- 3/4 cup unsalted butter, softened
- 1/4 cup molasses
- 1 large egg
- 1/2 cup chopped crystallized ginger
- 1 1/2 tablespoons minced fresh ginger root
Instructions
1
Combine dry ingredients - flour, ginger, baking soda, and salt - in a bowl to create a uniform mixture.
2
Combine brown sugar and butter in a large bowl using an electric mixer until they blend smoothly and harmoniously. Introduce egg into the mixture, followed by molasses. Gradually incorporate the dry ingredients with a wooden spoon until well combined. Incorporate crystallized and fresh ginger into the mixture, ensuring an even distribution. Refrigerate for at least 2 hours or overnight to allow flavors to meld.
3
When prepared to bake, preheat the oven to 350 degrees F (175 degrees C). Shape chilled dough into small balls, approximately 1-inch in diameter, and place them about 2 inches apart on ungreased baking sheets.
4
Bake in the preheated oven until lightly browned, taking around 10 minutes to achieve this. Remove from the oven and transfer to wire racks to cool
