  • 1 1/2 pounds chicken wings, tips removed and wings cut in half at joint
  • 2 cups vegetable oil for frying, or as needed

Combine soy sauce, water, gin, ginger, and sugar in a small bowl to create the marinade.

Place chicken wings in a single layer on a baking dish and pour the marinade over them, ensuring they are fully coated. Cover the dish with plastic wrap or aluminum foil and refrigerate for 30 minutes to allow the flavors to penetrate.

Heat a generous amount of oil in a 2-quart saucepan over high heat until it reaches the desired temperature of 375 degrees F (190 degrees C). Remove and discard the marinade from the wings, taking care not to spill any of the flavorful liquid.

Fry the chicken wings in batches until they are golden brown on the outside and no longer pink at the bone, taking approximately 10 to 15 minutes. Use an instant-read thermometer inserted near the bone to verify that it has reached a safe internal temperature of 165 degrees F (74 degrees C).
