Ingredients
  • 1 pound pork spareribs, cut into 3 inch pieces
  • 1 tablespoon vegetable oil
  • 1 (1 inch) piece fresh ginger root, sliced
  • 5 green onions cut into 2-inch pieces
  • 1/2 teaspoon ground cinnamon
  • 2 cups water
  • 1 1/2 tablespoons soy sauce
  • 1 teaspoon white sugar
  • 1 teaspoon rice wine
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Boil a large pot of water vigorously, then carefully insert the spareribs into the boiling liquid. Allow them to cook uncovered for 3 to 5 minutes, or until they reach your desired level of tenderness.

Transfer the spareribs to a colander and let them drain off any excess water, setting them aside for the time being.

Heat a generous amount of vegetable oil in a large skillet over extremely high heat, stirring constantly to prevent burning. Introduce the ginger, green onions, and cinnamon into the skillet, stirring vigorously until they release their fragrance. Continue to stir the mixture until it reaches your desired level of aroma, at which point you can remove it from the heat.

Now, carefully add the spareribs back into the skillet, stirring gently to combine them with the other ingredients. Allow them to cook for an additional 3 to 5 minutes, stirring occasionally to prevent burning.
