  • 2 cups cold water
  • 1 pound shrimp, peeled and deveined
  • 1/3 cup chicken broth
  • 2 teaspoons rice wine
  • 1 1/2 teaspoons soy sauce
  • 1 1/2 teaspoons cornstarch
  • 3/4 teaspoon sugar
  • 1/8 teaspoon ground white pepper
  • 1 tablespoon vegetable oil
  • 2 tablespoons minced garlic
  • 1 teaspoon minced fresh ginger root
  • 2 teaspoons vegetable oil
  • 6 ounces snow peas, strings removed
  • 2 tablespoons chopped fresh chives
  • 1/4 teaspoon salt

Combine salt with water in a large bowl, stirring until the salt is fully incorporated. Add shrimp to the mixture and let it sit for 5 minutes. Next, rinse the shrimp under cold water and gently pat them dry with paper towels to remove excess moisture.

In a separate, smaller bowl, whisk together the broth, rice wine, soy sauce, cornstarch, sugar, and pepper until well combined. Set this mixture aside for later use.

Heat 1 tablespoon of oil in a large skillet or wok over extremely high heat. Cook the shrimp, constantly stirring and flipping them to ensure even cooking, until they turn pink on all sides, approximately 1 minute. Stir in minced garlic and grated ginger, adding an extra 2 teaspoons of oil to the pan. Add snow peas, chopped chives, and a pinch of salt, stirring everything together for an additional 1 minute.

Stir the previously prepared mixture into the skillet, and continue cooking until the sauce thickens to your liking. Serve the dish immediately
