Ingredients
- 2 tablespoons vegetable oil
- 1/2 inch piece fresh ginger root, thinly sliced
- 1/4 pound thinly sliced lean pork
- 1 teaspoon soy sauce
- 1/2 teaspoon dark soy sauce
- 1/2 teaspoon salt
- 1/3 teaspoon sugar
- 1 teaspoon sesame oil
- 1 green onion, chopped
- 1 tablespoon Chinese rice wine

Preheat a large skillet or wok over medium-high heat, filling it with oil. Sear the ginger in the hot oil until aromatic, followed by adding the pork, a blend of soy sauces, salt, and sugar. Cook, stirring occasionally, for 10 minutes.

Introduce the sesame oil, green onion, and rice wine into the mixture. Allow it to simmer until the pork becomes tender and falls apart easily.
