  • 2 tablespoons cider vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon hoisin sauce
  • 2 cloves garlic, chopped
  • 1 teaspoon salt
  • 2 tablespoons sesame oil, divided
  • 1 1/2 pounds boneless pork chops, cut into stir-fry strips
  • 1 red bell pepper, diced
  • 1/2 onion, diced
  • 1 (12 ounce) package frozen stir-fry vegetables
  • 1 (8 ounce) can sliced water chestnuts, drained
  • 2 teaspoons ground ginger
  • 1 teaspoon red pepper flakes

Combine soy sauce, apple cider vinegar, brown sugar, hoisin sauce, minced garlic, and salt in a large glass or ceramic container until the marinade is well blended. Transfer 1 tablespoon of this marinade to a small, separate container. Add the pork pieces to the remaining marinade in the large bowl and mix until they are evenly coated. Allow the pork to marinate for a short period, approximately 10 minutes.

Heat 1 tablespoon of oil in a large skillet over high heat until it is shimmering. Cook and stir the pork pieces in the hot oil until they are nicely browned on all sides, roughly 2 minutes. Transfer the pork to a plate and return the skillet to high heat.

Stir sliced red bell pepper and onion into the same hot skillet, adding any remaining oil to the pan. Cook and stir until the vegetables are slightly tenderized, around 2 minutes. Add frozen vegetables and water chestnuts to the onion mixture, drizzling 1 tablespoon of the reserved marinade over the top. Sprinkle some grated ginger and red pepper flakes over the vegetables, then cook and stir until they are tender yet still retain some crunch, roughly 5 minutes.

Return the pork pieces to the skillet; cook and stir until they are heated through, approximately 1 minute more.
