- 2 tablespoons rice wine
- 1 tablespoon brown sugar
- 1/2 teaspoon cornstarch

Heat the oil in a wok or large skillet over extremely high heat until it reaches its smoke point. Quickly sauté the onion for 1 minute, followed by adding the ginger and garlic and cooking for an additional 30 seconds. Introduce the pork into the mixture and cook for a total of 2 minutes, allowing it to develop a rich brown color. Next, add the mushrooms and carrot to the pan, stirring them in for another 2 minutes.

In a separate, small bowl, combine the soy sauce, rice wine, sugar, and cornstarch. Mix these ingredients thoroughly until they form a uniform mixture. Pour this sauce into the pan with the pork and vegetables, stirring constantly as it comes to a boil. Allow the sauce to thicken for 30 seconds, at which point it should have reached a clear consistency. Remove the dish from heat and transfer its contents to a serving platter.
