- 1 cinnamon stick
- 1 teaspoon grated fresh ginger
- 1 teaspoon grated orange zest
- 1/8 teaspoon salt
- 1/8 teaspoon ground cloves
- 1/8 teaspoon ground allspice
- 1 (12 ounce) bag fresh cranberries

Combine water, brown sugar, orange juice, a fragrant cinnamon stick, the root of ginger, grated orange peel, salt, whole cloves, and ground allspice in a medium-sized saucepan; heat it up until the mixture reaches its boiling point. Lower the temperature and let it simmer for a period of time, allowing the sugar to fully dissolve, approximately 3 to 5 minutes.

Stir in fresh or frozen cranberries and put the saucepan back over medium heat. Continue to cook until the cranberries start to release their juices and the mixture thickens slightly, around 8 to 10 minutes; the sauce will thicken even further once it cools down.

Transfer the cranberry mixture to a bowl; carefully remove and discard the cinnamon stick. Store the sauce in the refrigerator until it's time to serve.
