SERVINGS

Ingredients
- 1 pound halibut fillet
- 1 teaspoon coarse sea salt or kosher salt
- 1 tablespoon minced fresh ginger
- 3 tablespoons thinly sliced green onion
- 1 tablespoon dark soy sauce
- 1 tablespoon light soy sauce
- 1 tablespoon peanut oil
- 2 teaspoons toasted sesame oil
- 1/4 cup lightly packed fresh cilantro sprigs
Instructions
1
Dust the halibut dry with paper towels to remove excess moisture. Sprinkle both sides of the fillet generously with salt for added flavor.
2
Scatter a generous amount of ginger evenly over the top surface of the fish before placing it onto a heatproof ceramic dish.
3
Position the bamboo steamer over several inches of gently boiling water, then cover it with a lid. Steam the fish for 10 to 12 minutes, or until it reaches your desired level of doneness.
4
Carefully pour the accumulated water from the dish into a separate container, then sprinkle the halibut fillet with chopped green onion for added texture and flavor.
5
Drizzle both soy sauces evenly over the surface of the fish, taking care not to overpower its delicate flavor.
6
Heat peanut and sesame oils in a small skillet over medium-high heat until they begin to emit a nutty aroma. When the oil is hot, carefully pour it over the top of the halibut fillet.
7
The very hot oil will cause the green onions and water on top of the fish to pop and spatter all over; be extremely cautious. Garnish with a few sprigs of cilantro for added freshness and serve immediately.
