Ingredients
- 1/2 cup olive oil, divided
- 1 cup sliced green onions
- 1 cup shredded carrots
- 4 eggs, lightly beaten
- 1/4 cup ginger paste
- 2 tablespoons minced garlic
- 1/2 teaspoon salt
- 4 cups day-old cooked white rice
- 1/4 cup soy sauce
- 1 tablespoon oyster sauce
- 2 teaspoons Sriracha sauce
- 1/2 teaspoon sesame oil
Instructions
1
Preheat your cooking surface by heating a quarter cup of olive oil in a substantial pan over an intermediate temperature. Add chopped green onions, shredded carrots, eggs, ginger paste, minced garlic, and a pinch of salt. Mix the ingredients softly until the eggs are fully cooked, taking around 4 to 5 minutes. Transfer the mixture to a serving container.

Next, pour the remaining quarter cup of oil into the same pan and add uncooked rice. Cook for 2 minutes, stirring occasionally. Add soy sauce, oyster sauce, Sriracha sauce, and sesame oil; blend the flavors together. Reintroduce the egg mixture back into the pan and mix it gently with the rice mixture. Continue cooking for another 2 minutes.
