Ingredients
  • 1 (3 pound) whole chicken, cut into 8 pieces
  • 3/4 cup distilled white vinegar
  • 1/2 cup soy sauce
  • 2 tablespoons thinly sliced fresh ginger root
  • 1/2 tablespoon black peppercorns
  • 1 bulb garlic, peeled and crushed
  • 2 bay leaves

Combine the ingredients of your choice in a Dutch oven and heat them over medium heat until they reach a boil.

Next, lower the heat and cover the pot to allow the ingredients to simmer gently for 30 minutes. During this time, periodically baste the chicken with the savory sauce that is forming.

Once the lid is removed, continue to cook the mixture until the liquid has decreased in volume by half, taking around 5-10 minutes. To ensure that your chicken is cooked to perfection, insert an instant-read thermometer into the meat near the bone and check that it has reached a temperature of 165 degrees F (74 degrees C).

Transfer the cooked chicken to a serving plate and carefully pour the remaining sauce from the pot into a separate container, discarding any solids that have risen to the surface.
