Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1/2 cup butter, softened
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 2 1/3 cups mashed overripe bananas
- 2 eggs, beaten
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
Instructions
1
Preheat your oven to the optimal temperature of 350 degrees Fahrenheit (175 degrees Celsius).
2
To prevent sticking, lightly coat a 9x5-inch loaf pan with non-stick spray or butter.
3
In a separate bowl, whisk together the dry ingredients of flour, baking soda, cinnamon, nutmeg, ginger, and salt.
4
Melt the butter in a bowl using an electric mixer until it reaches a smooth consistency. Gradually add white sugar and brown sugar to the melted butter, continuing to mix until well combined.
5
Add ripe bananas, eggs, lemon juice, and vanilla extract to the butter mixture. Mix until the ingredients are fully incorporated.
6
Mix the banana-infused mixture into the dry ingredient mixture, taking care not to overmix. The batter should still be slightly lumpy.
7
Pour the prepared batter into the greased loaf pan and bake in a preheated oven until a toothpick inserted into the center comes out clean, approximately 60 to 65 minutes.
8
Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to continue cooling completely.
